Have 2 receivers and 2 dishes with single LNB, each LNB has 2 coax connectors.
Can I run a set of connections from each LNB to 2 seperate switches ( 1 switch to each receiver ) without them interfering with each other,

Yes you can If there are any issues grounding your dish should take care of it
