Installing too many Kodi addons will definitely result in major performance degradation over time. It is highly recommend that you do your research before going ahead and installing every addon you find, and immediately uninstall addons which you don’t plan on using in the future.

Assuming your device doesn’t have unlimited free space (there’s no such thing), the more addons you install, the quicker your device’s available space will fill up, leaving less and less room for functionality necessary for streaming to operate. If you don’t leave enough free space for Kodi to pre-download or buffer content as you’re watching it, you’ll experience freezing and other nuissances that could easily be avoided.
If you have ten addons installed, which have updated ten times each, you basically have the equivalent of one hundred addons installed, since each time an addon updates it keeps an archive of the addon update file on your system. It is quite common for third party Kodi addons to update on a weekly basis, so your system will be flooded in no time if you install too many addons unnecessarily.
Basically you should only download the Kodi addons that you need, and if you decide you no longer need one, go ahead and uninstall it in order to avoid your device’s memory from clogging up like an old drain pipe.

If you feel that you’ve already clogged up your Kodi configuration with too much garbage, there are a few options. Those of you who really have a lot of nonsense installed and suffer from weak performance are encouraged to run Fresh Start tool which will restore Kodi back to its default factory state. You’ll probably want to do this at least once every few months in order to ensure the best possible performance out of your Kodi device far into the future.
