The pictured 2x4 was probably old-growth wood planed to todays size for comparison.

one of my first houses was built 120 years ago
I gutted the main floor and to modify the exterior wall I had to rip 2x6's
it was my first time working on a balloon framed house and was shocked there were no headers...lol

So much of the annual growth is going to depend on the trees environment. A tree growing in a northern forest will grow much slower than a tree in a southern open area. The growing conditions probably have a greater impact on the wood density rather than if it is "old growth" or "new growth".

I learned something new today, never heard of a balloon-framed house. Amazing they were built that way.
