Unless the provider can unlock it for you, there is currently no software unlock for the Iphone 4S yet. It's advised not to update to 5.0.1 if you are still on 5.0 though, since there seems to be a software unlock in the works for 5.0. Also A Jailbreak for the 4S just came out for Ios 5.0/5.0.1. Currently for Mac only
Maybe a new Ultrasn0w will be out soon?

jailbreaking and unlocking are two totally different things. there is no way to unlock an iPhone 4S
jailbreaking allows you to gain root access and run unsigned code on the phone.
unlocking allows you to use the phone on any GSM carrier in the world.
