I removed the old flooring where it was bad, then removed the dinette area and removed all the flooring there as well...I cut 2x2's on 12'' centers for added support and screwed them on the metal studs across the width of the camper..... I then took 1 1/2'' foam board and cut at 10'' strips and placed between the studs for insulation , then installed 1/2 plywood with staggered seams and screwed down every 6 '' with 1 1/4 wood screws... Installed a higher grade of laminate in the "kitchen" area , and a cut pile plush for the U shaped couch, and went with a standard plush for dinette area and "hall" . Used a moisture barrier 1/2 pad under the carpet , even made the molding for the laminate out of extra carpet :

For mice problems I take the wall sheathing off and the floor, the use aluminum sheets (the real thin stuff) to keep them from chewing through the walls or floor, then cover everything back up with exterior grade roof sheeting, then a good laminate on top, on the corners by the walls I use a 6"x6" L aluminum corner flashing, it keeps them from chewing thorough the walls.

And thats a great job there Noone, you should think about starting up a business doing RV repairs.

Knock on wood, but we had a pop up and never had any mice problems at all... This camper won't fit in the garage , so , it will be stored somewhere else when not in use....but you make a great point, and now a concern..lol
