I would like to make this clear to me with someone with superior knowledge. Is there a noticeable difference in speed between a cat 5 and a cat 7 cable?

Only if your router can run better then 1 Gigabit, most PC's/Mac's at most have a gigabit NIC, (network interface card) why run something that would not be needed for many years in the future, as far as I know no one is supplying anything faster as a stock gigabit NIC, you can order a 10 GBPS card but it's a bit expensive.
There is 10 GBPS stuff coming out but a standard CAT 5 cable will do fine for now.
