    • In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes.
    • Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream.

Tonight where doing stuffed split chicken breast with stuffed mushrooms an steamed Zucchini.

yesterday I put a pocket in the split breast then soaked them in a zip lock bag with garlic an zesty Italian dressing. today made the stuffing for it ! box stove top with 1 granny smith apple, 1/2lb of sage sausage (cooked) 8 small mushrooms sliced, 1-small onion, an celery chop"t fine. then stuff the chicken breast an then roll them in Italian bread crumbs. then place flat in a greased casserole pan an bake at 350 for about 1-hour 20 minutes, (cooking time may vary).

mushrooms just clean an remove the stem, then place mozzarella in center with some cream cheese on top an bake for 1-hour at 350
