    In the process of sous vide'ing corned beef brisket (the flat). 60C for 48 hours. Going to plate that up with some Brussels sprouts, carrots, and 'taters.

    I did a sous vide corned beef a couple of months ago for 60 hours at 145 F - it was excellent. I bought a few whole briskets and put one in a brine with Sodium Nitrite and a spice blend for 7 days.

    Today I've done spaghetti with tomato sauce, and waffles with honey for desert, it's a great thing. It's pretty quick and easy since I've a pizzelle maker made in Germany I think called Cuisinart (one of these: https://cozyhousetoday.com/best-pizzelle-maker-reviews/), it can easily bake waffles and pizzelles, while you relax and do your other stuff in the kitchen.
