    Grilling bone in chicken thighs, tossed salad and grilled nan bread with tzatziki.

    Being I work mostly here at my house I do most of the cooking and cook a wide variety meals.A lot of stuff I got off facebook.Tonight for the first time I made this for dinner and its good.

    Crack Chicken Noodle Soup

    Ingredients

    3 cups cooked shredded or chopped chicken breast (You can also use rotisserie chicken)
    1 (10.5 oz.) can condensed chicken soup
    6 cups low-sodium chicken stock
    1 cup whole milk
    1/2 cup chopped celery
    2 medium carrots, sliced
    1 (1 oz.) packet Ranch dressing mix
    1 cup crumbled bacon
    1 1/2 cups shredded mild cheddar cheese
    1/2 cup cream cheese, softened
    8 oz. Thin Spaghetti or Angel Hair - uncooked

    Instructions

    Combine chicken, condensed soup, chicken stock, milk, cream cheese, carrots, celery, ranch dressing mix, and crumbled bacon in a large Dutch oven over medium-high heat and bring to a boil.
    Turn down heat to medium-low and simmer for 20 - 25 minutes.
    add noodles and cheese and simmer until noodles are fully cooked.
    Top with extra crumbled bacon if desired

    I'm feeling very inadequate with dinner compared to those before me lol

    Kat wants homemade fries so that's it today!!
    I have been promising for couple of weeks but needed some fresh oil which I hate to use but
    have to start somewhere again.
    Next week I will make potato fritters

    I do not know what happened but I had an epic fail with my shortbread

    For many years I have baked whipped shortbread but I think I'm losing it lol
    They went all flat and didn't even cook
    I read and reread my recipe and thought about what I did different and cannot come up with a single answer

    Will I try again or make some regular shortbread? Not sure at this point because that is a lot of butter to waste.

    Anyway that's my rant and I'm done now!!

    The best Cashew Chicken.

    Springfield Missouri Cashew Chicken

    Ingredients

    1 1/4 pounds boneless skinless chicken breasts cut into 1 inch cubes
    1/4 cup + 2 teaspoons cornstarch divided use
    salt and pepper to taste
    1/4 cup vegetable oil
    1 teaspoon minced ginger
    1 1/2 teaspoons minced garlic
    1/2 cup chicken broth
    1/4 cup low sodium soy sauce
    2 tablespoons rice vinegar
    1/4 cup ketchup
    2 tablespoons sweet chili sauce
    2 teaspoons brown sugar
    1/2 cup roasted cashews
    3 tablespoons sliced green onions

    Instructions

    Place the chicken in a bowl with 1/4 cup cornstarch and salt and pepper. Toss to coat chicken evenly.
    Heat the vegetable oil in a large pan over medium high heat. Add half of the chicken in a single layer. Cook for 3-4 minutes per side or until browned.
    Transfer the cooked chicken to a plate and repeat the process with the remaining raw chicken pieces.
    Remove all the chicken from the pan. Drain any excess oil, leaving 1 teaspoon of oil in the pan. Add the garlic and ginger and cook for 30 seconds.
    In a bowl, whisk together the chicken broth, soy sauce, rice vinegar, ketchup, sweet chili sauce and brown sugar. Pour the sauce mixture into the pan.
    Bring the sauce to a simmer. Place the cornstarch in a bowl with 2 tablespoons cold water and whisk to combine.
    Pour the cornstarch into the pan and bring to a boil. Cook for 1 minute or until sauce has just thickened.
    Place the chicken and cashews in the pan and toss to coat with the sauce. Sprinkle with green onions and serve.

    I am feeling very lucky today!

    A fisherman friend gifted me two large pink salmon fillets individually frozen and
    one of the fillets will feed two ppl
    A bag of prawns and he also cures back bacon which is so fantastic (had it before lol)

    For dinner was salmon fillet. That's it just salmon!!
    Pushing the boat out later with a root beer float...yum

    Over the years that has been the exact meal that I keep going back to.
    I always do a pork butt roast and find it is much more tender and juicier.
    However when I am out of garden green beans I go to my garden parsnips that will last all winter

    Enjoy!!
